I find they are very 'forgiving'. As you will see in the video, they really allow the white of the paper to come through. If I make a mistake, I can easily lift the offending area and start again.
I used this brand, almost entirely, when I painted "Solitude'. Regarding paper, my preference is 300# cold press and 'bright white' if I'm creating a snow scene.
